Sweet Potato Soup Recipe

Simple homemade Sweet Potato soup Recipe

I bought a stick blender recently and it is quite simply brilliant. If you have kids that moan about 'lumpy bits' or homemade soup that 'isn't like the shop one' it's a must have.



As it's September I decided to make a soup for Saturday lunch and it's a nice quick one, sweet potato is such a soft root vegetable which makes it great for soup.

So I grabbed
  • two onions
  • 3 sweet potatoes
  • 2 garlic cloves
  • tablespoon oil
  • vegetable stock cube
and I set to work, peeled and chopped the vegetables to about 2 cm cubes. Lightly fried the onion and garlic in the oil while I dissolved the stock cube in just over a pint of boiling water, and set the potato to simmer in a lidded saucepan.

After the onion was softened I added it to the saucepan and waited. 30 minutes was about long enough to ensure the sweet potato was soft enough to squash with a spoon, so I removed the pan from the heat and used the stick blender to blend down the vegetables into a super thick and tasty soup.


There was enough to serve 2 (or 3 not so hungry people) and served with thickly buttered crusty bread it was delicious. I love a simple soup.

Autumn is suddenly here. Today it's raining as well as chilly. Proper ' stay at home and watch a black and white movie with a hot toddy' weather.

And that's great, for an adult, for a Sunday, for one day. But those with children (and I count myself among you still, despite dd being nearly 14) know that after a few days ... Hours ... minutes, kids will chill our very marrow with the cry of "I'm bored!" And the equally horrifying "what can I DO?" 

And the usual thrusting of a child into the back garden to play with football, trampoline or skipping rope is thwarted by rain, and trips to the playground curtailed because "no one will be there to play with" and "the slide will be wet" so we the parent are reduced to playing Lego in the lounge, painting in the pantry, cooking in the kitchen or beading in the bedroom.

You, like me, probably love to be with your kids, love to be with HAPPY kids, so I asked twitter for some ideas to add to the anti-whine arsenal and here they are.

Dairy Free Apple Cake Recipe - perfect for Autumn

A cake that is nice and simple to make although there is a fair bit of time involved in the preparation and then the cooking. It is dairy free.

The Apples we used were from the tree in our garden and it's a great way to use up a glut of autumnal goodies! 




I helped to peel and dice the apples, but only as we needed so many! DD (aged 13) did all the rest. Why not give it a go? It's from my Amish cook book. If you are struggling with 'cup' measurements (American) try this conversion website.

And ignore the temp they list for cooking as that's F not C.

The temp you need is 180C

And here is the tasty result. Which Mamacrow and Eddsnotdead tried and declared nice. And then DD ate for breakfast and tea until it was all gone!
